WHAT DISH CAN NGOC LINH GINSENG BE USED TO MAKE? (Lesson 1)
Chicken Stewed with Ginseng: a very elaborate dish with high nutritional value

Ingredient
- 1 chicken (bamboo chicken) is about 1kg2-1kg5
- Package of herbs to cook chicken stewed with ginseng (You can buy herb packages of chicken stewed with ginseng at the supermarket)
- Ngoc Linh ginseng roots, sliced Ngoc Linh ginseng (you can refer to some reputable units specializing in providing natural Ngoc Linh ginseng such as Dong Truong Phat)
- A little goji berry and red apple, ginger, and leek onion
- 5-6 cloves of garlic
1. Making
Make chicken:
Take the chicken, remove the head, remove the neck, remove the chicken feet, rub the chicken with salt, ginger slices, green onions => rub inside and out to remove odor.
Put the chicken in hot water, not too boiling, soak with salt for 10 minutes, the chicken will release dirt, and the chicken skin will tighten.
Make 1 bowl of ice water => remove the chicken from the hot water, skip the ice bath => the chicken will be firm and will not break during cooking, the skin will be crispy and fresh (this step is very important to determine whether the chicken will be beautiful or ugly).
The chicken is taken out and put on display => you will see its shape become firm again.
Flip the chicken's ass: add all the whole cloves of garlic, add a few apples => stick a toothpick in the chicken's butt.
Use toothpicks to shape or tie the legs to keep the baby's shape tight, clip the thighs and armpits
2. Chicken stew
Take a pot of 1 and a half liters of water and bring to a simmer without the water being too boiling.
Add the chicken, put all the ingredients into the pot, add 1 teaspoon of salt
=> cover and boil to remove foam => cook over high heat and cover for about 30 minutes until the chicken quickly softens.
After boiling, lower the heat and simmer for another hour (covered).
- After 1 hour, open the lid, add goji berries, and stew for another 20 minutes
When the chicken is cooked, open the lid and you will see the aroma, the water will also release the medicinal taste and the taste of the chicken. Take out the herb packet and discard it.
Season again: with salt, a little seasoning...mostly at this point the chicken has a basic taste, only seasoning very little to bring out the flavor.
Place in a bowl and sprinkle a little green onion on top to add a nice touch.
The natural flavor from chicken bones, the medicinal taste from ginseng and red goji berries are very good for family health, especially people who have just recovered from illness, or are in poor health, can eat stewed soup with chicken, drink water and drink. It's okay to not eat rice.
